Lucius Hamilton Hayward began selling beans in New Orleans in 1923. He called his new company Camellia after his wife’s favorite flower. Field peas, also called red or southern peas, are related to balck-eyed peas and came from Africa. They produce a deeply flavorful broth when cooked, and their small size means they cook faster than larger beans.
