Lucius Hamilton Hayward began selling beans in New Orleans in 1923. He called his new company Camellia after his wife’s favorite flower. Lady Cream peas, sometimes called Lady Creamers, came from Africa along with the other cowpeas, all part of the black-eyed pea family of legumes. They’ve got a delicate flavor and produce a clear broth when cooked, and their small size means they cook faster than larger beans.
