Named in honor of Italian cookbook author Marcella Hazan, these white beans were called Sorana in their native Tuscany. They’re delicate and thin-skinned, but get deliciously creamy when cooked slowly at low heat, a perfect bean for our no-soak beans in the oven, aka fagiole in fiasco. It was also Marcella’s favorite way to cook them.
